Better Than Boxed Brownies

Did you know that it’s National Baking Month? Kind of seems odd that it comes after all the holidays, but if you’re focusing on your health this month we can all use a little indulgence every now and then.

When you splurge, try these Better Than Boxed Brownies. I shared this recipe for WKYT this morning in Lexington. I was a bit hesitant to try them because I was afraid they wouldn’t compare to boxed brownies but…. OH MY GAWWWWWD was I wrong.

These are 10 times better than boxed brownies!! These brownies are super easy to make this upcoming weekend or just for a slight splurge on your otherwise healthy January journey.

Better Than Boxed Brownies

Ingredients

  • 6 tbsp butter
  • 2 cups semisweet chocolate chips
  • 3 eggs, room temperature
  • 1 cup sugar
  • 1 tsp instant coffee grounds
  • 1 tsp vanilla
  • ½ cup flour
  • ¼ tsp baking powder
  • ¼ tsp salt

Directions

  1. In the microwave, melt the chocolate chips and butter, stopping and stirring at 30-second intervals until melted and smooth. Set aside to cool.
  2. Preheat the oven to 350 degrees. Grease and flour a 9-inch baking dish
  3. Beat eggs, sugar, coffee and vanilla with a mixer for about 3 minutes, till lighter in color and well blended. Add cooled chocolate and mix until combined.
  4. Add flour, baking powder, and salt and stir until combined.
  5. Scrape the batter into the prepared dish and smooth the top.
  6. Bake for 30-40 minutes until the center is puffed. The top will crack. Cool completely, then remove from pan to serving plate.
  7. Serve with ice cream or whipped cream if desired.
  8. Enjoy!
