I’m all about a good crockpot recipe. Especially during the week when we have 7,382 kids activities to rush off to.
Last night, I enlisted “Betty the Crockpot” to help with dinner. I had some canned pineapple in the pantry and wanted to incorporate it in a recipe and man! This one was a smash…. literally! 🍍

Pineapple Crockpot Chicken
Ingredients
- 1 lb chicken
- 1 can pineapple with juice
- 1/2 yellow onion, whole
- 2 tablespoons sesame oil
- 3 tablespoons honey
- 1/4 cup soy sauce
- 1/2 cup brown sugar
- 1/2 tablespoon ginger
- 1 tablespoon minced garlic
- 1 tablespoon cornstarch
Directions
- Put pineapple with juice in bottom of crockpot and add chicken
- In a medium mixing bowl add the other ingredients together and then pour over chicken
- Cook in crockpot on high for 3 hours or low for 5-6
- During the last 30 minutes of cooking, add cornstarch and chicken broth if too dried out
- Serve over egg noodles or rice
