The BEST Breakfast Sandwich
There is a place in town that makes the B E S T breakfast sandwiches on the planet. However, by being the best there are a few issues with the sandwich:
  1. They sell out fast
  2. I have 4 kids and going anywhere for breakfast isn’t really ideal
  3. Repeat steps 1 & 2

In my attempt to recreate the sandwich, I came up with a new version that I’m positive will leave you satisfied on a lazy Saturday morning.

Bookmark this one for a rainy or snowy weekend when you’re craving brunch, but don’t want to leave the house. Pair it with some mimosas to really feel like you’re living the highlife.

The BEST Breakfast Sandwich

Prep Time: 15 minutes
Cook Time: 20 minutes (for honey glazed bacon)
Serves: 2
For the Aioli Sauce (you will have leftovers of this):
  • ½ cup of mayonnaise
  • 1 garlic clove
  • 1 tablespoon lemon juice
  • 2 teaspoons olive oil
  • salt and pepper to taste
INSTRUCTIONS:
  1. Mix together in a small bowl and set aside
For the Honey Glazed Bacon:
  • 4-5 tablespoons honey
  • 4-5 slices smoked thick bacon
  • ¼ teaspoon coarsely ground pepper
INSTRUCTIONS:
  1. Preheat oven 400°
  2. Line baking sheet with parchment paper and lay bacon flat on sheet, pop in oven for about 10 minutes
  3. Take bacon out of oven and glaze with honey, sprinkling pepper on top
  4. Put back in oven for another 10-15 minutes, until cooked to desired crisp
  5. When bacon is finished, let cool and cut into halves, set aside
For the Sandwich:
  • 2 Bakery Fresh Croissants (you can swap this out for French Bread, Sourdough, or GF bread)
  • 2 large eggs
  • 1 teaspoon Everything but Bagel Seasoning
  • 1 Avocado
  • 2 slices Havarti or Swiss cheese
  • Fresh arugula
INSTRUCTIONS:
  1. Cut croissants in half and spread aioli on both sides
  2. Fry egg with olive oil in skillet and top with Everything But Bagel Seasoning, when egg reaches desired cook, remove from pan and set aside
  3. Lay one slice of cheese on one side of croissant and either heat on stove or place in microwave for about 20 seconds until cheese melts
  4. Add fresh arugula, avocado and bacon to croissant, then add egg. Top the sandwich with the other side of croissant and cut in half, serve warm. Enjoy!
