Easy Weeknight Honey Salmon Bowls

This meal is on the table in 30 minutes and is super fresh and healthy. If you have an Aldi near you, try the Mediterranean seasoned salmon to add additional flavor to the fish. I think this seasoning really kicks the taste buds up a notch.

Honey Salmon Bowls

INGREDIENTS:

  • 4-6 salmon filets, or 2 large ones, cut into bite size cubes
  • 1/3 cup virgin olive oil
  • 2 tablespoons honey
  • 2 tablespoon soy sauce
  • 1 tablespoon apple cider vinegar
  • salt and pepper to taste
  • steamed rice, tabbouleh or even quinoa to serve on the side
  • Spicy Mayo to top (recipe below)
  • Optional toppings: edamame, avocado, feta

Spicy Mayo:
1/2 cup mayo
1 tablespoon chipotle in adobo, chopped
2 teaspoons honey

INSTRUCTIONS:

  1. Preheat oven to 450.
  2. Mix together ingredients 2-6 and then marinate the cubed salmon in a bowl. Marinate for a couple hours before baking (if possible).
  3. On a baking sheet, lay out tin foil and then arrange your salmon on a single layer.
  4. Bake for 10-15 minutes or until salmon is cooked.
  5. Spoon the salmon over steamed rice or quinoa and top with optional toppings (edamame, avocado, feta)
  6. Drizzle spicy mayo on top and serve warm.
